Orchard duck confit lettuce wrap

Ingredients
- 500 g (1 lb.) duck meat confit
- 120 ml (½ cup) minced mild onions
- 30 ml (2 tbsp.) finely chopped fresh garlic
- 30 ml (2 tbsp.) Carminée du Verger du Clocher
- 10 ml (2 tsp.) minced fresh ginger
- 25 ml (1/2 tsp.) Peau Rouge (smoked chipotle)
- 12 lettuce leaves (Boston, Romaine, Iceberg or other)
- 1 can water chestnuts, finely chopped
- 3 green onions, slivered
Preparation
Chop duck confit. Add onions, garlic, Carminée, ginger and Peau Rouge. Mix well. Serve on lettuce accompanied with water chestnuts and green onions.
